Note: The version of Photoshop being used in this tutorial is Adobe Photoshop CS5. The “Quick Selection tool” in older versions of Photoshop works the same, but the icon representing the tool maybe different.
1) Open a new document in Photoshop and enter the settings according to the picture you are going to use. These are the settings I have used for this tutorial:

2) Go to File > Open and choose the image you would like to select something from. This is the image I am using for this tutorial:

3) Select the Quick Selection Tool and make sure you have selected New Selection from the bar above. ![]()
4) These are the settings that I have used for the brush settings:

5) Now I am going to use the Quick Selection tool to select only the fish from the image that I loaded into Photoshop in Step 2. To select the part of the image you would like, simply click and drag the mouse over that part of the image. This is fairly simple and should work just fine. However, if you accidentally choose a part of the image that you do not require, you can just as easily select the Subtract from Selection tool and drag over that part of the image to remove it (the third brush on the bar in the picture above). You can use the Add to Selection tool in the same manner to add anything else you like.

6) Once you are finished with making your selection(s), choose the Move Tool and drag the selection(s) from the image onto the New Document that you opened in Step 1.

Voila.
